This is one of our favorite THM meals! This is a “S” meal. Why is my favorite meals always seem to be S meals? Hmmm…
This is not my recipe, so I’ll send a shout out to the blogger that posted it originally, Meals and Messes.
I will share my own tips though:
- If you don’t have all the spices to make the ranch dressing, you can use the dry ranch powder (just make sure the brand is THM-friendly)
- DO NOT SKIP ON THE PARCHMENT PAPER! Or you can use Silpat like I did. The first time we made this recipe though, we were a little lazy and I just heavily sprayed a cookie sheet. Half the crust stayed on the pan. Yikes!
- I halved the dressing portion and doubled the dough portion. It made a regular cookie sheet pan sized pizza.
- My kids and I both agree that this tastes better with thin crust. The first time, it was delicious but half the crust was stuck on the pan. The next time, I used my Silpat and got all the crust…and it was a little too thick. The crust is very flavorful and because of the coconut flour, can tend to be a little dry so the thinner crust makes a better balance.
