I’m still trying to incorporate as many Trim Healthy Mama recipes as I can in my menu. I’m hoping with school now starting that I can settle into more of a routine and do THM 100%. As I find great recipes, you know, the ones you feel like you should be cheating.
All of these recipes we actually found on Pinterest so I’m only sharing the links for them but the pictures are ours. I made the hot dog one, my daughter made the chicken taco one and then I did the cake and she did the frosting.
Oh. My. Today was an amazing food day!!
First, for lunch I made the Everything Bagel Dogs. I used Hebrew National Hot Dogs as she recommends because they do not have corn syrup. I could not find our sesame seeds so I substituted sunflower seeds. Next time though, I will use a little less poppy seeds and I will cut back a little on the salt.
We found the pin for the Healthy Zucchini Tortillas here. All we did was pan grill some chicken (we seasoned it with Meze seasonings from Inspiration at Home (?)), then we made tacos with sweet red peppers (from our garden), tomatoes, purple onion, jalapenos, sour cream and fresh cilantro. I skipped the jalapeno on mine and added just a tad of Mexican blend cheese. UPDATE: I forgot to add this when I first wrote the post, but my daughter used ground flax meal instead of the bread crumbs and added an extra egg. When you spread the batter out, you want to make sure that it’s not too thick in the middle and that it cooks completely through so it won’t tear apart.
This amazing Chocolate Zucchini cake has been circulating around in the THM circles and we decided to see what the fuss is all about. Wow. The texture was amazing! I’ll be honest, most of the baked goods are lacking. Not this one. The only adjustment we made was we added a tiny bit of caramel flavoring to the frosting. My picky-zucchini-hating-kids even gave it a thumbs up.
